Q: What are the exact measurements? A reviewer said 11 1/2 by 8 1/2. Is it really 8.5 inches? That would make it too large for my quarter sheet pan.

I just measured mine. I get 11 14/16" by 8 5/16". It fits exactly inside my restaurant standard quarter sheet pan.

Q: Is it safe to trim/cut if it doesn't fit my baking sheet?

Yes, you can trim it. I have several sizes I have trimmed. You get a bit of discolouration along the edges you trim but it does not harm performance or durability.

Q: Is it good to sit candy apples on ?

I would imagine candy apples would be fine. It's a "slickery" surface so the apples won't stick.

Q: what does it mean Two-Thirds Size? isnt it 14 x 20 inch?

17 x 25 is considered full side. They have a quarter half and 3/4 size available, which happens to be the one you are looking at.
