In a past life I worked in a kitchen that used all German steel knives. I find this knife to be well balanced and holds an edge. In the kitchen we never let a blade get too dull and that is key. The price on this is excellent compared to price.

As a chef, I will buy knives once in a while simply on whim. And, at Amazon, with their great customer service, I can return ones that suck. This one is not too bad. It is not like my Shun knife, but it is just as sharp. (Not hard to do, though. It is simply the angle of edge of the knife.) It does seem to hold the edge for a bit. I do have a sharpener, so easy for me to put the edge back one. It is a bit lighter than I would like on the back-end of the knife, but that is simply preference. I think most people will like this knife.

The knife looks great and feels great in the hand it is solid. However it is not that sharp , will have to be sharpened in order to cut carrots , can get thru lemons and tomatoes but hard veggies won’t cut easily u will be chopping your food have not tried on meat yet. I like the knife it’s just not that sharp and that’s ok because it is a great price point definitely worth it but order a wet stone sharpening kit to get it to cut easier.

Beautiful and Quality kitchen knife. It is razor sharp, heavy, well balanced. It comes with beautiful packaging as well. I absolutely love it.
