I've been making hummus for years and could not figure out why there was always a touch of bitterness in the finished dish. I did some reading by some well known Israeli chefs and Soom tahini was mentioned as the best. They were absolutely right. The flavor is so balanced, no bitterness, it does not separate and stays creamy even when refrigerated. The quality is top notch and is excellent value for the money. This is the only brand I will be buying in the future.
