If you like salty and tangy, you have to try this ume plum vinegar. It's actually the brine of pickled ume plums, not true vinegar. The flavor is salty, somewhat sour, with bright fruity notes. A little goes a long way (not to mention that you might want to not douse your food with this considering the sodium content), so these two 10 oz. bottles should last a while! I actually think this ingredient is far more versatile than a lot of people give it credit for. You can use it with a little olive oil for a simple salad dressing, or just add a few splashes to cooked or raw veggies (I really like adding some to fresh garden cucumbers, maybe with a drop of sesame oil, as a light snack), but it can be employed in a lot more than just salads. One really good recipe I've found uses this with beets and quinoa, it's absolutely to die for! Actually you can skip the quinoa and just make quick-pickled beets with an umeboshi twist. I love stir-fried bok choy with this for a light meal. Since it has a very pleasant salty taste, I have seen it as a fish-sauce replacement, I've also used it in place of soy sauce in recipes. Umeboshi is praised for its health benefits, most of all being highly alkaline, which is good for your gut, so if soy doesn't agree with you, this might be something worth trying. I'm glad I went with Eden brand, as it doesn't have artificial color, the purpley-red hue is from the shiso leaves used in the ume plum pickling process. The bottles are glass and amber tinted to filter out light, keeping the product fresh for longer. These bottles arrived safe and sound, they were shipped nicely wrapped in bubble wrap! Will definitely buy again once I run out, this is a great product to keep stocked in your pantry. My favorite salty vinegar. I add it to all my salads without any additional salt (NB: it is VERY salty on its own, so use it sparingly!) delicious side-flavor of ume plum adds an extra umame kick.
