Pleasantly surprised how much I liked these
I bought these for their nutritional profile - like everyone right now I’m looking to get a little more protein and more fiber. I like to eat as plant-based as I can and my husband with type 2 diabetes watches his carb intake, so these noodles are great for all of the above! Prepared the black bean fettuccine as specified on the box, boiling to the longer cooking time and rinsing in cold water. The flavor of the noodle is very neutral - which is what I want when using noodles. I used the noodles with a pasta sauce and meatballs, and I’m using them also for a noodle bowls with added veggies and tossed with a sesame ginger salad dressing (as pictured). I think the noodles are really versatile, they don’t stick together and they don’t fall apart or get mushy. The texture is chewier than a traditional noodle, but it’s a texture I like and I think it works especially well in the noodle/veggie bowl format, either warmed or cold. I’m making a box each week, keeping the noodles in the fridge and using them with different veg/greens/salad dressings for lunches. The black bean fettuccine seemed just slightly thicker than The Only Bean edamame fettuccine which I also bought and liked a lot.

Tasty, fast-cooking, low-carb pasta, good for diabetics and those with gluten intolerance.
For people with diabetes or gluten intolerance, non-grain pastas are a godsend, and black bean seems to hold together better than lentil or even chickpea, and cooks VERY quickly. You do not get the same starchy pasta water needed for some sauces (unless you add some flour to the water, or like some restaurants, freeze ice cubes of pasta water when you make starchy pasty to use later!!). Also, while it does not have gluten, it is probably not good for people with FODMAP allergies (beans, cruciferous vegetables -- I would hate to have that!), and it did plug up my digestive system when I ate it several meals in a row. (Drink more fluids than with wheat pasta, and perhaps some soft fiber to offset the bean fiber.). It has more taste than most protein pastas, with a bit of a nutty flavor, which can be good or bad depending on the dish. (Edamame and chickpea are good alternatives, though chickpea has more carbs.)

Pretty good, despite my hesitation
As an Italian, I was hesitant about this, but I bought it for my girlfriend who -- unlike me -- loves black beans. I was pleasantly surprised the the black bean flavor was fairly mild. The texture is a little off, but not by too much. It's obviously a little pricey, but that's what you get for specialty foods. As you can see, the color is very dark, which may be bothersome for some people, depending on the sauce used. Overall, there were several drawbacks, but fairly small drawbacks. I'm certainly not switching over entirely, but will likely buy again from time to time.

Not black beans but black SOY beans…
Rubbery and kinda meh. You might like it if you like soy beans. I’d rather just take the pain from the sugar spike of regular pasta. I think what disappointed me the most was I glossed over the ingredients. This made of black soy bean and not black bean like the giant lettering says. Was very disappointed in the taste and misleading packaging.
