Sharp.... I drew blood from my thumb just putting the white plastic protection tip on it
I've waited over a month to leave feedback for this particular ""7 inch- Edge Deboning Fish and Meat knife". Having been in catering for many years in the past, de-boning whole pigs, legs of lamb, whole hams, and other carcasses, carving every almost type of roasted joint you can think of. I decided to bite the bullet and spend some money on a new decent knife, instead of using the same ole half a dozen of different "Cheap" knives from supermarkets, that really weren't that good, having to trying to keep them sharp.. Sabatier knives were always the high-end traditional standard to use 50 years ago, and I always thought they were sharpest and best knives to use. How wrong I was,, These "modern" types of knives weren't around 50 + years ago. This SHAN ZU Japanese knife is the sharpest I have ever used. I bought this particular knife to use for almost every job, like carving roasted joints like chicken and for all meats. Any experienced chef will tell you that you don't need a particular knife for every task. It ticks all the boxes for quality and sharpness.

Amazing Knife Set apart from some inaccuracies.
First and foremost, this is a beautiful knife set and is very sharp out of the box, however I had one steak knife that was slightly warped in the blade. This was resolved quickly by Amazon with a knife replacement. Now I almost didn't purchase this set because of some lack of information and some that was inaccurate. The knife handles are not plastic but are made of Pakkawood. The blades have a hardness of HRC 58~60. Also anyone who is thinking of buying this set should really look at Shan Zu's website on the items specifications because it has so much more information on there than here. And yes, it is German Stainless Steel. MY PERSONAL EXPERIENCE Each knife has some weight to it which is lovely, the blade itself is strong and sharp. It truly is a beautiful set. I will update of course if I notice any sign of rust or other imperfections. SHAN ZU: You would sell ample more knife sets if all the information about the set is exactly like the website because I for one won't touch plastic handles which if I breadths listing at face value I would not have touched it but I noticed the picture of the handle on here not looking plastic and I did some research on the product. Thanks guys!

Great knife
Super sharp and strong. I use it as my boat fishing knife. Easy to sharpen, clean and is a dream to use to filet fish

Good quality knife
Bigger than expected, comes very sharp so be carful. Other than that - good quality for the price and all in all, a good chef's knife.
