it checks so many boxes
i looove red chile powders but i don't do high heat. This pepper is not med-hot. i would call it medium or even mild. The flavor is really good. The price per ounce is very low. it was delivered overnight. The color is more orange-red, not red, but that makes for an attractive dish. Not an important feature but it is very finely ground. The most important thing, it tastes like Chimayo grown. i have only been able to find one ground pepper i know for sure to be Chimayo. Bueono Chimayo insprired pepper does not taste exactly the same as that one but i would not expect that. it is easily just as delicious. i would say it is authentic. i recommend and i will repurchase if i ever manage to use it all. it's a hefty bag. Update: No matter how airtight your storage, it clumps together a bit. But it separates when you use it.

New Mexico chile fix
I am from New Mexico and currently live in Virginia. Red chile is a staple for me and Bueno is quite good -- I'm happy that I can get it in the mail when my stash from family runs out.

Excellent Flavor
Very strong packaging. Excellent flavor. Not too spicy, but I was raised on the stuff.

Good powdered red chile, but it is not Chimayo Chile.
This is a good powdered red New Mexico chile. Bueno is a good reliable brand. Unfortunately, the online advertising says it is powdered Chimayo chile, which it is not. So I feel the vendor is using misleading advertising. Chimayo Chile comes from Capsicum annuum Chimayo and has a distinctive flavor. The Bueno packaging says it is made from New Mexico Dried Red Chile Peppers "Chimayo Inspired." New Mexico red chile peppers are almost always Sandia (a cultivar cross of NuMex No. 9 with Californian Anaheim chile) or Hatch (a cultivar cross of NuMex No. 9 with earlier Rio Grande Valley chile pepper varieties) chile peppers. They are all longer, meatier peppers than the Chemayo pepper, and generally hotter. They are a good tasty pepper, and I have been eating sauces made from these peppers for more than 70 years. Bu I have also been eating Chimayo chile for the same amount of time, and I can taste the difference.

Absolutely the best for chili!
We eat a lot of New Mexico chile in our house, being big fans of both Hatch chile and chimayo chile, which is absolutely the best flavor for authentic red chili. This chile powder does not disappoint and is at the most reasonable price we could find for chimayo chile powder. A little goes a long way - and for all of our dishes where we include a red chile sauce, this is absolutely the best to use. We did not buy the extra hot, the medium provides enough heat but an abundance of flavor which is what you want. We have friends that don't like very spicy dishes that absolutely rave about my red chili and my adovada. Highly recommend you purchase and decide for yourself. You won't regret it.

My favorite for huevos rancheros and for making red enchilada sauce
Well, technically, I prefer the frozen version of this, but this all-dry version is easy to store. I used to live in New Mexico, and I'm very familiar with this brand. It's real NM chile (which makes a difference – the NM cultivars have been especially bred for a century or so for maximum flavorfulness, and are quite distinctive). This pureed dried kind is what you usually want for general red chile sauce, to use for huevos rancheros, carne adovada, etc. (just add a little water and you're done!), but also as the base, with various herbs and spices like cumin, coriander, and sage, and Mexican oregano, for home-made taco sauce, enchilada sauce, or even Tex-Mex chili. I really like this Special Reserve variant. It's a hint spicier than the regular Bueno, richer, and slightly sweet (naturally, not sweetened). It beats the pants of using generic red chile/chili powder. For coarse chile caribe, I use Loma Vista brand, though.

Love this combo chile product!
I love to cook and right now I am all in to making tamales. The flavor combo of the various chile's used to make this blend is fantastic. And, while I bought this large package for my tamale making adventures, I have used this blend time and time again in varous recipes and found the addition improves the taste of every one of my go to recipes I have added it to. Fresh, reasonably priced, and packaged well. This Amazon third party seller is perfect in my book and will be my go to source for chilies from now on.
