Texture is soft, its a grain, taste and benefits are evident
This a great product... I used putting it in the coffee bean grounder and add to my milkshakes... I feel the benefits... Honestly, I don't know how cook it, so next time I will be ordering a cooked version from amaranth. But after that, this product is rated for A-plus, in my opinion....

I had gastric sleeve done. Perfect for nutrition and protein. Divides and freezes good. Always fresh tasting. I use in my rice cooker and it is perfect every time. Will purchase again

Amaranth every day. Such a great value.
This amaranth grain is awesome. It's so much less expensive than even the non organic in the South Asian grocery store. I need to get as much magnesium as possible because I am taking vitamin D vitamin k supplements but magnesium supplements don't work for me. (Vitamin D doesn't wirk without vitamin K and drains magnesium.) 2 cups cooked a day is 300 units of magnesium. Really recommend amaranth every day! It takes up a lot of my daily calories and that saves me money on food. Yay. To the people afraid for the negative reviews I will say this...amaranth grain is disgusting. I do not like the taste. I add raisins and am experimenting with grinding it in my blend tec into flour to make muffins. I eat it because it is an incredible source of magnesium and protein. It is also a source of iron that does not constipate. That alone makes it a miracle food. And I can not handle magnesium supplements. If it wasn't so nutritious I would never eat it. Ever. But I truly believe I will find a way to make it taste good if I keep searching It's sticky. It's not great to taste and it is so good for me I will always eat it.

Great product
It was impossible to find this in my local grocery stores. This is a great, non dairy, gluten-free alternative for corn chowder for my vegan son.

NOT CERTIFIED GLUTEN-FREE
***WARNING*** This product is NOT GLUTEN-FREE. The company has confirmed that they process wheat & other gluten product on the same belt/ machines as this product. Causing a cross contamination. ***This was my email/ chat questions for the company. *** Are they all processed on the same machines (gluten & gluten free products) causing cross contamination? Is your 10lbs bag (all of your products) of Amaranth Certified Gluten Free for those with a severe intolerance? Also, the Amaranth I purchased is eaten very sanding. I cannot help but to wonder & to ask what exactly is that crunchy, non desolvable by particle mixed in with your Amaranth? I've sift it, wash it thoroughly, soak it & I still get untolerable crunches of some type of dirt/ sand/ or small pieces of glass like feel in my teeth when chewing. I have learned how to best avoid some of the grit by not stirring while cooking & not eating what's left at the bottom of my pot of cooked Amaranth. Basically, skimming the top & discarding the settlement at the bottom. A waste of food but, it's how best I have experimented in avoiding most, if not all of the grit...

Excellent if cooked properly
Perhaps not for everyone, but I find it quite tasty. Experiment with it. To prevent it from becoming a sticky glob try 1.5 cups water to 1/2 cup amaranth. Boil the water, then add the amaranth and stir. Simmer with a lid on. Stir every 5 minutes or so to prevent it from clumping. Do not overcook! About 20 min is as long as you want to cook it, remove the lid for the last 5 to 10 min. It is done before it looks done, remove it from the heat and put the lid back on. Don't cook it like rice or oatmeal, that is, until all the water is gone. This stuff is not going to fluff up. It cooks more like Buckwheat/Kasha, another pseudo-grain that will turn to a mushy, sticky mess if cooked too much. I've tried it with just salt, it tastes somewhat like a squash, a bit earthy and nutty. Marking porridge by adding some milk or half and half with fruit, Maple syrup, sugar, or better yet jams or jellies. It goes great with Lingonberry preserves. Guess it's all a matter of taste. Before tossing it out, experiment with it till you find something you like, or, at least don't hate.

fresh and clean; too fresh?
I've ordered products from this company before and was not surprised to find the amaranth to be fresh and clean. However, I wonder if it is too fresh, that is, green, not quite fully ripe? Since I am not familiar with the characteristics of this particular seed/grain, I am not sure. I use grains like chia and quinoa in baking sourdough artisan breads, so I am not a stranger to supplementing wheat flour with exotic grains. The first time I used this amaranth I toasted it in a skillet and added the whole seed to the dough. The mildly toasted amaranth had a pungent aroma, not pleasant. It imparted a slightly bitter taste to the finished bread--tastes OK but not great. The second time I used it I ground the seed to flour without toasting it. It smelled green, i.e., not quite ripe, and it imparted a similar "green" flavor to the finished bread. I'm baking again today with a smaller proportion of the grain, and it definitely smells green, not something I've noticed other bakers writing about amaranth. So, I cannot say the product is less than what it should be, but that this first and only batch of amaranth seems too ripe for me.

I cook a cup of this on a weekend and keep it in the fridge for my daily breakfasts through the week. I eat it like oatmeal adding things like shredded coconut, pumpkins seeds, chia etc. It is a hearty breakfast and it keeps me "regular"! Love this stuff because it fills me up for hours. I'd highly recommend this and I had bought it based on a suggestion from my naturopath.

I use the seeds of the amaranth to grow some plants, which I can consume once they have sprouted. This product is very healthy and relatively inexpensive, for its quality.
