Q: How many spoons of ground coffee per mug? Can’t find a brewing guide anywhere.

They are beans, not ground coffee. It will depend on your machine or taste preference if using a manual brewing process. If you are not sure, I would suggest watching some utube videos on dosage. Because the beans are off cuts, I would imagine they will different each bag. Therefore, it will be impossible to give a definitive. Good tasting coffee and like all coffee. You play around with the variables until you find your Perfect coffee.

Q: Given that the beans are roasted daily, how old are they likely to be by the time I receive them? I need freshly roasted ones whenever possible.

All i ca say is they are not fresh. Tastes like they are the dregs of whats left over. Don't waste your money.
