Is it good for outdoors

Yes. The package says it is good for interior or exterior use. I used on the travertine tile in my shower and it has held up very well. FIrst applied one year ago and still holding up.

How many coats do we need to apply to a limestone fireplace seat?

At least two good saturated coats. Throw some water on it the next day if it's still absorbs put another coat on. Please make sure that you saturated or at least 15 to 20 minutes and wipe it off and then buff it out. If it's drys on you just put some more sealer on and scrub it. it will re emulsify for you even in the next day

Is this sealer good for coping on saltwater pools?

I do not think this sealer was ment for salt water. Most sealers are for rain water- fresh water
