All of our cinnamon comes from the cassia source. The coumarin that is present in cassia cinnamon is naturally found. We are not adding coumarin to the product, so we can not provide a specific amount. Coumarin is a naturally occurring compound present in several plants, not just cinnamon. Examples include licorice, strawberries, cherries, apricots, blueberries, green tea, and lavender. ~JM
