For poultry leg hoop style

I haven’t used these hooks for poultry yet. I bought them for hanging ribs and they work great for that!

Work good for chicken (?) where is best place to hook them so they don't fall off?

Works great with a whole chicken. You can hook in the back or trough the breast.

Can these hang up a brisket during bbq inside the smoker?

it would depend on the size of the smoker and the length of the brisket. As for weight handling, I hang 5lb to 7lb bacon slabs on each hook without issue.
