Are these different than their pic mins?

Yes, they are different in that Trace-Minerals provides the nutrients in Citrate form whereas Pic-Mins provides the nutrients in Picolinate form.

Can you open up and put in water jug?

Most Thorne products can be taken out of the two-piece, pull-apart capsules. However, there are a few products they don't recommend taking out of the capsule, which would be indicated in the 'Warning. The warning is not for Trace Minerals and they can be opened and put in water.
