Superb for cutting Prosciutto and other cured meats easily and safely
I purchased this knife after being given a Prosciutto ham as a gift and had no idea how I could go about slicing it even reasonably thin. I looked at a number of different products available and this one caught my eye - a) it has an accident protection attachment and b) this doubled as a guide when cutting the ham which allows for uniform thickness/ thinness depending on how you angle the knife and how much pressure you use. The knife itself is really sharp and (so far) I have chosen to use it with the anti-accident attachment - at least until I am confident in my knife skills and ability to cut thin consistently. Brilliant idea that I have only seen from this Company.

We bought this to handle a big prosciutto ham. The knife is excellent it works as expected and does produces slices thin that are very enjoyable. The delivery of the knife was on time and came two days later as expected. As a side note we bought a second one as a present for the family.

Great design
I have not used the knife as yet, but I love the design. It is almost impossible to hurt yourself because of the safety feature, and it is designed to give you nice even slices. It promises to make you feel like a ham carving pro.

Excellent knife to help protect your hands while cutting thin slices.
I was born and raised in Spain and have cut plenty of hams with the traditional knives. I have so far avoided any accident, but I have personally met people that had really bad accidents when cutting Spanish hams (jamon), and so I am always very careful and always willing to learn new ways to stay safe. This is a great invention and really helps in two different fronts. It helps keep the slices thin (although you really need to know how to cut a thin slice, or will still get them too thick with this), and it helps a lot in protecting your arm if while cutting a thin slice your knife slips past the meat and gets to your hand or arm. It's a no brained purchase, if you are even considering it, given the cost, just go ahead and buy it and get some peace of mind while cutting your jamon.

Easy and safe to use.
It is an excellent product if you want to cut a thin piece o Serrano jam without having the risk to cut yourself.

Does not keep you from slicing poorly.
The idea is great, a device that helps you make paper thin slices of that expensive Jamon. But... Attaching a plastic guide to a very flexible knife blade, just makes it hard to see what you are doing, and it won't keep the knife from cutting too deep. the knife will flex away from the guide, and as the gap widens the slice thickens. You'll just need to practice taking thin cuts that you can see, instead of making cuts that you can't. a long sharp knife is a requirement for thin slices of Jamon, but "flexible" is not a requirement. In fact I think it makes it harder. Laying a stiff, sharp slicing knife, flat on the flesh with a little pressure will start your cut, and then the angle of the blade will determine the continuous thickness. Flexible blades make it harder to apply pressure, harder to hold an angle, and ultimately harder to cut thin even slices. After my first Jamon... It was truly interesting for me. The different parts had different flavor and texture. Learning to slice was an experience, but after a short time and moving away from the thin flexible knife, I was able to get the hang of it. Being the household "Jamonero" (the one tasked to wrangle the beast), I can tell you it takes a lot of time and effort. If you are planning a Jamon for a party, expect to be slicing constantly, the entire evening. Most videos of slicing start you on the side that has a small amount of meat and then a lot of bone. That is actually good, because it forces you to hone your blade skills trying to harvest pieces from around joints and bones. And just about the time you are exhausted and frustrated, but with better knife skills you find that the rest of the ham is smooth and easy, and rewardingly easy to process. If I was buying a Serrano or Iberico Jamon for a party, knowing what I know now, I'd probably hire someone to be the ham slicer. Whatever you pay for your Serrano or Iberico Jamon, you'll need to invest more in time, skills and effort, either your own, or someone else's, to get a satisfying experience. But if I was having a party and wanted to be so distracted that I wasn't required to socialize then Jamonero is the perfect calling. If you don't already enjoy amazingly sharp knives in your kitchen, I'd recommend honing that skill first. Without a really sharp knife, you will be nothing but angry and frustrated.

GREAT SPANISH HAM KNIFE THAT IS HIGH QUALITY
The knife is very good in slicing ham very thin. It is very sharp and flexible. It is now one of the best knife I have for special occasions.

Cheap cheap knife
This knife is kind of sharp. That is about it. It is flimsy and the handle is something that I would expect from a knife bought at the dollar store. The guard works but is not adjustable and cut way too thick for deli meat or cheese unless you are going extra chunky. I gave the knife a chance on a ham and after 3 mins I just went to a crappy old steak knife which performed better. I cannot believe the reviews this knife has gotten because even if it cut what you needed it to, it is still made about as poorly as possible. Also take a look at the fake reviews on this knife. It is a huge problem on this site. You can simply tell by half of them that absolutely nobody would right like most of the 5 star reviews. My expectations were very low for the knife... it was well below them. I found a $10 knife at BB&B that worked out better. I am just baffled that the overall rating on something this poor has been pushed to obviously dupe the public.

Parfait ! J'ai acheté ce couteau pour le mettre sur le buffet de mon mariage ou j'avais prévu un jambon entier. J'avais la crainte d'une coupure de mes invités ( qui se servaient seul ) et la protection a très bien fait son travail . Tout le monde était ravie de cet ustensile. Le couteau coupe très bien et le guide/protection fait très bien le job . Il permet d'avoir des tranches très fine sans aucuns danger . Je recommande++

Sehr gut um die ersten ganz dünnen Scheiben vom spanischen Schicken entnehmen. Da lagt den spanischen Schinken vor mir. Schnell im Internet geschaut wie bekommt man die dünnen Scheiben von dem spanischem Schicken runter wie in Spanien. Man benötigt ein Top Messer aber zu erst für Anfänger. Dieses Messer erfüllt den Bedarf des Lehrlings ohne die Gefahr sich zu schneiden, die Klinge ist flexible aber auch sehr scharf. Habe sie trotzdem noch schärfer geschliffen. Nach den passenden Vorbereitungen an den Joselito Schinken konnte ich die ersten dünne Scheiben genießen. Ein sehr gute Produkt, einfache Handhabe, kein Verletzungsgefahr und ein absoluten passenden Preis.
