will 700 C tieres fit this?

The fender will not cover the total horizontal length of a 700c tire well enough to keep all the spray off the riders back. The "SKS S-blade" and "SKS X-tra Dry XL" fenders would better fit the needs for 700c tires.

What's the width of the product? Can it be used for fat tyre bikes?

No more than 4 inches or so. On a fat tyre? You shouldnt have a problem attaching it to your bike. I could see using it on the road, not so much on a trail.

How many inches (or cm) of seatpost are required to mount it? (i have a giant cypress dx 700c hybrid bike with suspension seat post)

You need about an inch and a half of space in the seatpost to attach the rear fender. Hope this was helpful.

I have a rear rack on my trek 7.2 fx, would this work with my setup? tires are 700x35

I guess if you have enough seat post extended. Why do you need one if you have a rear rack?
