Do you have to solder the wire to connector?

The clips are indeed intended to connect directly to the led tape, so I'm not exactly sure why the clips are sold with the spool of wire. It's near impossible to solder the wires to it and if you manage to get it the clasp doesn't close.

How wide I’d the ribbon cable itself?

I do not have anymore to measure but the connecting clips sucked.

can this wire work at 100C environment temp? I want to place it inside an enclosure that could internally reach this temp.

Buy good insulated wire that is rated for high temperature usage.
