How many TVs can work at the same time? Different channels?

It depends which channels you want and where you are. TV is broadcast in groups of channels, called muxs. You can probably watch two or more channels in the same mux group at the same time but if you want to watch channels in different mux groups you can't. You need to do a bit of research about the mux groups broadcast by your local transmitter. Hope this helps and makes sense.

How many gpio pins does this tuner actually use/need? i have a number of 'bits' connected to my pi so want to ensure i have enough pins for the tuner

Will this work with plex installed on another computer ?

Yes but you need an additional plugin running that will allow plex to talk to tvheadend. Not the easiest to setup but doable.
