Can the sensor be removed from the housing?

No. It's not a sensor, the electrical connector is the mechanism that opens and closes the thermostat

Yes it fits and seals with no problem. Had no problems up to now and temperature gauge is constant

I have fitted one to my zafira. Yes it did come with the rubber seal. The only issue was the cable plug it's on top of the unit were the original was on the side.
