Does this work well on MacBook Pros while using an adapter?

What adapter are you referring to? The Mac powersupply? It works with your MBP as if it’s a normal USB keyboard. If your keyboard can work, Loupedeck also can works

When you use the copy button, does it open the lightroom dialog where you can choose which settings you want to copy or does it just copy everything?

It just copies all of the settings including local adjustments.
