Would I be able to sand as solid oak and stain darker to match a solid wood dark oak floor?

Hi if you order the unfinished oak option you will be able to stain this as the unfinished is raw oak. The Lacquered option has lacquer on which isn't easy to sand off as it sets deep into the grain.

Can the strip be glued in position?

Yes I glued the plastic part to the floor and then inserted the wooden strip.

Can these be used with carpet both sides?

I don’t see why not. Although there are no teeth to grip the carpet and you may need to reduce the tongue to get it low enough.
