Has this flour been "bleached" to get it white? or is it a more natural color and no bleaching? curious

Hi, all our flours are not bleached, enriched or bromated. In Europe, these procedures, are illegal. Thank you for your interest in our products :-)

Can this be used the same as other organic all-purpse flour or is it a finer flour? curious

I've been using it for 2yrs. I used it for cookies, cakes, pancakes, crusts, biscuits gravies. I have not made pizza or bread. to me, I use it as an all purpose flour. however, it's been a few years since I've made artisan breads. I'm very satisfied with what I've made with it so far. hope this helps. 

Why is this listed as soft wheat flour when it's ingredients are hard winter wheat?

I don’t know the answer to that , I use this as I would a regular white flour , but with the peace of mind that it is organic and non gmo
