Question 1

Should I be using this product to enhance the flavor of my brown cocoa powder, or would an espresso powder work better?

Accepted Answer

According to the product packaging itself: "It is not typically used for flavor.  Use brown cocoa instead"  Is printed directly on the package, under the nutrition info.  (See product image #6 above.)  It gave my cookies a taste somewhere between "burnt" and "too much baking soda".  Quite dark, though!

Question 2

Can you mix this with regular natural cocoa for example 1/4 dutch process with 1/4 cup natural cocoa?

You can, butbfor me, it's way too dark. I just made coffee that way and have icecream going. I'm hoping I didn't waste my ingredients. Next time, I'll be trying a ratio somewhere around 1/8 dark, maybe 1/8 cocao butter, and 6/8 natural chocolate. I'll be eyeballing it in 1/4 cup measuring cups though. Hope this helps someone.

my recipe calls for dutch processed cocoa will this be to strong?  should I mix a teaspoon of regular cocoa?

Black cocoa is not stronger, it's just darker colored. It also has a slightly different flavor, than cocoa that is lighter colored—but the difference is subtle and it's a good flavor. I don't think there will be any problem. Dutch Processed cocoa is less acid than "natural" cocoa. Both are good, it just depends on what you want. Recipes with Natural Cocoa often add a bit of baking soda to counteract the acidity. This is not necessary if you use Dutch Processed Cocoa.

Question 4

Does anyone else's bag have a sticker that says "NOT to be used as a flavor agent...use only to add dark color to bake goods..."?

Mine has that statement but is not a sticker - it is part of the print on the package.  It says that for flavor to "use brown cocoa instead", which seems to strange to me and unexpected.  This make me think that I should return it but perhaps I should try it anyway since many have said that it does have a good flavor (?)
