What is the maximum height of makeup pans that can fit in the palette?

No higher than 7mm including the shadow itself. I put one in that had a curved shadow colour which stuck out above the pan and this has rubbed off on the lid because it touches it when the lid is closed.

How many Sydney Grace pans can fit in each empty palette?

Hiya, I am not sure how many cm Sydney Grace's pans have. If it's a std pan (2,5-2,6 cm) you should be able to fit 24 eyeshadow singels but they won't fit perferctly in a row and there will be some empty space left in th pan.
