Are these stackable? I'm trying to match the height of my standup desk to use my laptop as a 3rd monitor

Yes, they stack nicely. I did it with the two I purchased. The legs are “pin” adjustable for height. Very pleased with quality and product.

Do these come with hardware to connect them into one long stand?

No, these are 2 separate stands - no connecting hardware.

Are the tops rigid? want to remove the legs & attach the tops to pole bracket vesa mounts, for use as tray surfaces for my split keyboard & mouse.

The tops are moderately rigid; I found that if I placed a monitor on the side of the stand, rather than the center, it resulted in an annoying tilt to the monitor, and I had to put a piece of wood on top to correct for this issue.
