Hanamaruki Mutenka Koji Miso (Additive-free) 750g

This is a very big tub of miso from Japan and is quite balanced and mild in flavour. It is between the sweetness of white miso and the sharpness of red miso, so is very versatile in that you can use it for various Japanese dishes. I like using it for miso ramen, simmering vegetables and soup dishes. It also makes a great sauce if you mix it with a bit of water and use it for silken tofu. The price is very reasonable, it is one of my favourite miso pastes.

I've been on a Miso binge since I bought this product. It is perfect for making any sort of noodle based broth. You get a lot of it for the money.

Really pleased with this miso paste. The flavour is rich, savoury, and properly deep without tasting harsh or overly salty. It blends well into soups, noodles, broths, and sauces, and a little goes a long way, so the tub lasts ages. It gives dishes that proper umami kick and makes even simple meals taste much better. I’ll definitely be buying it again.

It is ok, very salty though, quite coarse as it has bits but not necessarily a bad thing. I have tasted much better quality as I have been working as a chef in asian quisine. I don't make recommendations, do your homework.

I've tried a few misos from Amazon as I use it daily in soups & dressings as a salt alternative. This is one of my faves and I've re-ordered. It has a nice chunky texture and delivers an umami flavour punch. Slightly on the salty side hence 4 stars not 5. Good value.
