If there are any differences? how is this different to the vitafiber brand?

This brand I believe is derived from tapioca and Vitafiber is derived from non - GMO corn. Viscosity, binding properties, browning properties, etc are the exact same.From a taste standpoint... This has an aftertaste. With Vitafiber, there is no aftertaste whatsoever.The aftertaste is mild enough to where it can be masked in certain foods. I definitely wouldn't eat it as a pancake syrup replacement, like you can with Vitafiber.Vitafiber is still the best hands down. This is a better than good enough alternative though if you don't want to spend the money on Vitafiber.P.S. a lot of people use this as a straight sweetener... And it's supposed to be used as a potent sweetener amplifier. Meaning, you should ideally amplify the sweetness of stevia, erythritol, and monkfruit. If you use stevia, then mix it with monkfruit to remove the bitterness. As soon as you mix it with an isomalto-oligosaccharide syrup like this, you'll notice that you don't nearly use as much sweetener.What may have called for 1/4 cup sweetener in a recipe can seriously be replaced with 2 Tbsp Stevia/Monkfruit blend or Monkfruit/Erythritol blend plus 2 Tbsp IMO syrup.

I bought this to use as a sugar substitute for baking, but can't find a sugar equivalency chart. Can I only sub it out for honey or corn syrup?

The volume will be like Honey or Corn Syrup, however the sweetness is only 50% of table sugar, so if you are looking for a sweeter taste you should add more sweetener, either a sugar or high intensity sugar substitute. Another solution is to add inclusions like chocolate chunks or chips or fruit to add sweetness.

Just because something says "packed/packaged in USA" does NOT mean the actual ingredients/supplies came from USA. It only states it was packed in USA.I cook and bake as healthy as I can and noticed that some protein based items gave me intestinal upset(guilty party=sugar alcohols) I have been researching alternatives and came across IMO. However, BioNeutra (Vitafiber) did recently get approved to manufacture the IMO in North America. Before, the main distributors were in China and Japan.
