I wish I could give this knife more stars. It's my favorite knife in my collection. When I was in Japan I purchased 3 knifes to bring home with me...all good but this knife is the best. I'm saving to buy a full set of these including the set of steak knives. Highly recommend this knife if you need to fillet. I use it to trim the fat from large cuts of meat that I get from Sam's or Costco and even from our butcher when we have our cows slaughtered. I can cut beautiful pork chops from a whole tenderloin or remove thr bones from chicken thighs effortlessly. The size is perfect for my use and actually since I don't really know what I'm doing I'd probably cut-off a finger if I used the larger one It's VERY VERY sharp I swear I piece of paper comes close to it and it just melts Perfect balance....feels like a quality piece.... Good knives make all the difference when working if the kitchen....worth in investment If you're on the fence on this one don't wait just get it!

Really nice knife. It looks good and feels good in my hand. Very sharp right out of the box. I haven’t used it yet but I’m sure it will work well for butchering. Which is why I purchased it.

This knife is sharp and built very well. I fillet some whole flounder the other day this knife did real good. I am pleased with it quality and performance.

Love the look and feel of this knife. It's super sharp and it's great for performing thin slices in a straight line. My only wish is that the blade was a little thinner to allow it to flex and bend while you're removing the skin of a fish on a cutting board. This is why I gave it 4 stars. If you don't want the knife to flex like I did, then it's definitely a five-star knife.

This is a very nice knife for the price. The edge is very sharp and the knife is heavy but balanced well.

Beautifully crafted and sharp af. Could easily sub as a ninja weapon if you wanted to defect to Japan and/or join the Hand in NYC although I wouldn’t suggest enrolling as the Defenders are back on the rise.

I bought this 7-inch HOSHANHO fillet knife mainly for cleaning and filleting fish, and it has worked really well. Right out of the box it was extremely sharp and made very clean cuts. The blade has just the right amount of flexibility, which makes it easy to work along the bones and get nice fillets without wasting meat. The handle feels comfortable and secure in the hand, even when things get a bit wet while cleaning fish. The high carbon stainless steel blade also seems to hold its edge well after several uses. Overall, this is a great fillet knife for the price. It’s sharp, well balanced, and does exactly what you want when preparing fish. I would definitely recommend it to anyone looking for a good fillet or boning knife.

This knife is beautiful to handle and use. I don't really leave reviews for items. But the price for this is well worth it. The blade is agile. It's not bendy, so don't buy it for bendy uses. But because the width of the blade is thin, it can still work around bones and bone knots. I love using it. It's become my go-to for everything because it's satisfying to use. And then when you sharpen it after X weeks/months of use, it just comes back to life again. Amazing amount of knife for the price. I bought two and am finally giving the other one away as a gift because it's so amazing.
