Is this carbon filter suitable/better for a cooker hood where I have previously used a 'paper' filter?

Carbon filters absorb cooking smells; 'paper' filters absorb grease. My experience is that cooker hoods recirculating the air have two filters. Hoods extracting the air through an exterior vent have a single filter absorbing grease. Check the manufacturer's instructions before making changes.

What size is it please?

Unfortunately I didn't measure it. But it was larger than I expected. I had to trim a lot off. In fact another 3 inches and I could've saved half for next time. My cooker hood I suppose is standard size, width being same as my cooker.
