Is this anhydrous or dihydrate?

This is Anhydrous Calcium Chloride.

calcium hydroxide the same as calcium chloride? Both are pickling lime

Calcium Chloride is never used or considered as "Lime", totally different usage in food when compared with calcium hydroxide. Go search in google and you will get the idea.

what is the dilution rate, mixing with water, for cheesemaking? Does the water need to be distilled, or unchlorinated? Thanks

Thanks for your question. Dilution rates vary from recipe to recipe and cheese maker to cheese maker. It also depends on how much calcium your milk starts with versus how much you want to add. Typical recommendations are 1/8 to 1/4 of a teaspoon per gallon of milk you are using. Dilute the calcium chloride in 1/4 cup of water per gallon of milk. The water does not necessarily need to be distilled, but chlorine-free is recommended.

Used for making cheese

This worked very well in my cheesemaking. The pellets dissolved very readily in water and worked just like I expected it to. I can easily recommend it for whatever culinary uses call for it.

Great value and my cheese is delicious!!

Great value and my cheese is delicious!! I took a cheese and fermentation class at NWTC in Green Bay. SO FUN!! I now make soft and hard cheeses for my charcuterie boards. I make 2 wheels for each one I eat now. Amazon is a great source for all my needs. I don't know if you can check out all my reviews BUT I always shop for cost per ounce or each. Then read reviews to make sure a product is well liked. Enjoy your journey and Happy Cheese!!
