Swedish Delight!
Lingonberries are widely used in Swedish food. They are considered to be an essential accompaniment to many Swedish dishes, most notably kรถttbullar (meatballs), kรฅldomar (stuffed cabbage rolls) and raggmunk (potato pancakes). Lingonberries grow in the wild in Sweden on small bushes in woodlands and on moorlands. They ripen in August and September and are picked with a scrabbler, a wide fork-like tool, which can strip a bush very quickly. Although the berries might look attractive on bushes they are not good to eat in their raw state as they are quite bitter. They have shiny, rather hard skins when fresh, but they are transformed with a little sugar. Then they become quite sophisticated, as the combination of their natural bitterness with the sweetness from the sugar goes well with game, meat, fish and with several desserts. Lingonberries are full of powerful antioxidants which are said to neutralise the sun's radiation and help prevent skin damage. Eating lingonberries is said to ward off certain cancers and to help prevent some types of infection. As a result Swedish children were traditionally encouraged to have lingonberry jam with porridge for breakfast and to have a portion of lingonberries with many main courses.

OMG..once you try this, you will never eat another jam ever! This is so fruity and not too sweet at all. Put it on toasts, pancakes, crepes, waffles, ice cream, pork chopsโwhatever!!! Heck I can even eat this by the spoon and finish the whole jar in one sitting!!! ๐Itโs really that good.

Perfect for German pancakes or crepes!
Years ago, my late oldest brother and I enjoyed a smorgasbord restaurant near the San Diego Sports Arena. On Wednesdays, they had folded crepes with a delicately flavored pinkish whipped cream, flavored by lingonberries. German pancakes cooked in a large (15") thin iron skillet were made, covered with lingonberry preserves, sprinkled with cinnamon sugar, then rolled up, glazed with flaming Himbeergeist raspberry liqueur, adorned with more sugar, and served to you and your sweetie. At Luchow's famed German restaurant in New York City, such a dessert served after dinner on a Sunday night in the early 1900s was virtually a marriage proposal. Such a quaint tradition that has long since passed into memory still appealed to me, a former wedding caterer and current cookbook author in the final stages of the book. But I always wanted some lingonberry preserves to try it for myself. I ordered two jars -- one for me, one as a gift for my daughter, but after having spread some on buttery toasted English muffins (put the butter on BEFORE broiling!), I might just keep both jars! Lingonberry preserves taste like tiny cranberries, with a slight tartness reminiscent of cranberries but much more flavorful. My young grandsons are spending the night this weekend, and I will make crepes or waffles for breakfast and have the lingonberry preserves available -- a true act of love! Thanks for a great price and fabulous packaging that ensured their perfect delivery!
