I saw a buyer saying that the installation of the product is complicated. Are there any detailed installation details or videos?

Is there a 16mm version of this available anywhere?

Sorry, we don't have 16mm. We regret that we can't help you. You can try looking for it on Amazon

Will this work with iPhone 11 Pro Max?

Yes, this phone holder can be compatible with 7" smartphone, so it can works with iPhone11 Pro and There are two types of mobile phone brackets at accessories, just choose the one that you like.

It probably wouldnt be smart to have an expensive phone in this while driving 70 mph with the doors off. Not a good idea right?

I think if you have the phone locked in you would be OK. The support rod is well built（Metal Material） and does anchor in with screws so the mount won't come out but if you hit a big enough bump at speed you might be able to dislodge the phone but it wouldn't be easy.
