Can you substitute this in place of arrowroot powder in a recipe? Also, why are the nutrition facts different between the 2lb and 4lb bags pictured?

I wouldn't think it would be a replacement - arrowroot powder is more like corn starch or tapioca starch, it's a thickener, and consists mostly of starch, which is a carbohydrate. Wheat gluten is mostly protein. I can't answer as to the nutritional information - I haven't checked both bags, so I don't know.

Why is their 75g of sodium per serving when vital wheat gluten is naturally low in sodium. Is their something different in the process of your product
