Choi's Kimchi Co. does not pasteurize our Kimchi. As a result, the pouch that contains our Kimchi may expand because of the natural fermentation and the release of CO2 that occurs during transit. Worry not; we process our kimchi daily and ferment our kimchi in accordance with transit times and our cold-chain pack out! Our Kimchi is made using a traditional recipe that has been handed down from generation to generation from our home in Portland, Oregon. Each order is made to order and we are here to answer any questions you may have! Kimchi is a traditional fermented Korean food composed of various vegetables and seasonings. Widely considered one of the world's healthiest foods, Kimchi is rich in vitamins, low in calories, and packed with lactic acid making it a rising star in probiotic foods. Our Award Winning Spicy Napa Cabbage Kimchi is the most traditional variety we offer and is made in the USA using a small batch process. Please refrigerate after receiving your package to maintain product quality. Review: you won’t regret buying it - I’ve been a loyal buyer for the last 4+ years, I LOVVEEE their kimchi so much it’s insane!! perfectly spicy, crunchy and fresh omg I eat it with just about everything. It comes wrapped up tight, never experienced leaking/smelling at all, with cooling packs for the journey to my doorstep. I love it best with just plain white rice & seaweed, or chasing it with a pot of shein ramen ❤️ also makes amazing kimchi fried rice, & kimchi pork dumplings! I love you Choi’s Kimchiiii Review: Very good kimchi! + the probiotics! - Edit: Just want to add that I that I've tried a range of other kimchi's since writing this review and even some much more expensive ones weren't as good. Really appreciate the flavor, freshness, crunch and price of this one - if you can't get it made fresh at a local asian store this is the way to go IMHO. (If you're needing to drop some pounds and like kimchi it's terrific for that too - salty and addictive, satisfies that craving and you can eat as much as you want.) I love kimchi... I live on the East Coast and was surprised to get this kimchi so quickly. It was very well packed and arrived in perfect condition, in a very bloated bag - as expected, because kimchi out-gasses in any situation where it's fermenting, which it's supposed to do. It's a straightforward vegan kimchi, really delicious, with plenty of crunch and delightfully good flavor under the intense but not insane spiciness. It's at the fermentation stage that I like best, though good kimchi is tasty to me throughout. I use kimchi a lot of ways but I most like to just nosh on it plain and cold throughout the day until it gets to the point where it's best in soups and stews. One of the most addictive foods I know! I'm surprised that nobody mentions in the reviews that kimchi is LOADED with probiotics. For me it helps hugely with tum and IBS troubles. I'll definitely repurchase this brand, though with shipping it's crazy pricey. This is the best one I've found online (though there is another that I like almost as well, less spicy and not quite as nice in texture, tho), and much better than a lot of grocery store brands. Highly recommend.

Choi’s the choice...
What can I not say good about this kimchi?! As someone only about two years new to Kimchi I have made a mini mission of mine to try all versions possible as I am hooked. (Plus the added health benis are chefskiss). None the less I am in love with Choi’s and was not at all disappointed unless wishing they shipped a radish version is a disappointment. Haha. None the less this is a must try brand as the taste is great and the cabbage even though fermented is a great crunch to add with an salad, as a side dish, just alone Or even with some white rice. It had a great acidity level and the good amount of spice- I could do an even spicier version maybe; but this version is good for all spice level pallets. The small pieces of green onion and radish are also a great treat but still wish they had a strictly Radish and strictly Green onion versions. The package was shipped wonderfully! It was well packaged in a sealed cushion encased pouch and two ice packs that were still very very cold when I opened it nearly 4hrs after it was delivered because... well Target happened. Haha but any who this is a must try especially if you are wanting to expand your tastebuds and have some added health benefits to your food prep. Choi’s has me as a customer for life. Just hook me up with my desired items :)

Delicious & helps my acid reflux!
All the way from Washington State to South Florida! I should find someone local as shipping was about 80 hours & the kimchi only had a slight coolness to it. The cold packs, no longer cold because of the high heat. But it is fantastic! If I hadn't read the reviews about the bag being blown up like a balloon, because of the fermentation, I would not have accepted, let alone eaten it! The fermentation for my gut health is exactly what I'm after. It definitely is helping me. Instead of popping alka-seltzers, when I have acid reflux, I eat a few bites. I don't understand how it helps, but it quiets that down quickly. And is yummy! You cannot hide your new kimchi habit, though. Once you open the bag, the entire house will know!

Amazing Customer Service & Amazing Product - Do Yourself a Favor and Order It Now
I have been craving kimchi for a while now and took some time researching options here before deciding to take a chance with Choi's Kimchi and ordering. Long story short, when I received the package, damage to the outer packaging was seen. However, when I cleaned up the mess that inevitably resulted from this mishap, I noticed that it smelled AMAZING. I then wrote back to Choi's to ask them when this would be back in stock, so that I could reorder it (after chalking up what had happened to issues involving its delivery, I was not able to blame them obviously for it and just wanted to know when I could re-order this specific item as it had since came up as "Currently Unavailable" when I tried to repurchase it. I told them what had happened and just really had hoped for an estimate re restocking. Instead, Choi's FANTASTIC customer service rep, Austin (shout out if you're reading this!) was apologetic for my situation and sent me a brand new replacement instead. I had since ordered their 14oz. sized bags to try out, so this totally blew me away and made me feel estactic for what was to come. In the end, both packages actually end up arriving at the same time and we tried them out. INCREDIBLE. Delicious, crunchy, spicy, fermented perfectly; we cannot be more pleased with the end result and Choi's now has a permanent customer in me. My overall experience re the professional, courteous and wonderful customer service and overall product quality could not have been better. Highly recommended! BUY THIS ASAP!
