Do you sell anything with sodium nitrate rather than pottassium nitrate which this product has making this a saltpetre rather than prague powder #2?

This is the European spec for Prague Powder #2. You're thinking of the USA spec. This isn't pure Saltpetre, it is the EU recognised blend of Salt, E250 and E252 that, when combined, form Prague Powder #2

I’m about to trying making my own corned beef but I’m unsure which curing salt to choose Prague 1 or 2 or a completely different curing salt.

Prague 1 and 2 are used to keep the colour in the cured meat from going an unappetising grey. It used to be sulfate of potash which is used in explosives and now can no longer be bought easily. I don't think 1 or two make much difference. I think Prague 2 has sodium nitrate and nitrite. Prague 1 has sodium nitrate only. I hope I have in some way answered your question. I use mine for Biltong

Can i mix it with minced beef for making jerky?

You can use this, though for jerky you should should ideally use Prague Powder No 1 instead, as the temperature it reaches during the drying process makes it a cooked product rather than a raw product.

Do you sell something that has e250 and e251 as my recipe calls for sodium nitrite and sodium nitrate to get consistency?

Your recipe will work fine with this, which is the EU spec. You are unlikely to find the USA spec over here.
