Before you drop the egg in, add a teaspoon of white wine vinegar down the centre hole. Make sure that the water is NOT bubbling fast as this will dissipate the white! You should only have one or two bubbles coming up to the surface. Drop the egg in gently - try cracking the egg into a little dish and then bringing that to the centre hole and gliding it in. What is the handle made of? Is it silicon? or plastic? Review complained about handle melting if laid on pan.

What is the size of the head of the pancake turner?

At its widest 6”, depth 5”. It certainly makes turning pancakes easy. I also use it for omelettes.

Does the poacher move around the pan or is it suctioned onto the bottom of the pan?

The poacher just rests on the bottom under its own weight and no suction is involved. It helps to lightly hold the poacher in place while putting the egg in. With water at about 60deg Cent (just below boiling) an egg straight from the fridge takes 4 1/2 to 5 minutes to poach properly. Works fine.
