Wanting to gesso over previous paintings for a clean start. What kind of canvas coverage can I expect from a single container?

you can gesso over acrylics and water medias NOT oils. that said one coat on an average size canvas 30 x 30 will take about 1/4 of a jar and give you a pretty good start. to go white with no shadows 2 coats or more might be necessary. gesso is very opaque goes a long way and good for prepping even the "pre gessod' canvases. gives a nice finish that i prefer and paint moves easier over a cost of gesso you apply, than the way the canvas comes from the store

Yes, this is white and completely opaque. Golden does not make a 'clear' gesso (but the do make a Black Gesso).
