what Dog fight / Flight simulator, Helicopter Games are good with this? I'm a beginner, never used a Flight stick, want to start with something easy

I use it regularly with Warthunder, World of Warplanes and occasionally Mechwarrior online. If you take the time to set it up properly (Warthunder and World of warplanes both have presets for this joystick but tweaking the settings is advised) then it performs admirably in all of them. That said, you will be going up against people using mouse aim so a joystick is an enthusiasts choice.

Yes it is Geoffrey has obviously got his wires crossed on this one, The only thing I have a problem is that it is not ratcheted and become a pain when the slightest knock of the joystick sends your plane soaring skyward.

Is this good for rise of flight?

not totally sure, I used with microsoft flight sym and it works really well.
