Will this work with windows 10? Also will this cope playing online games like Rust or Ark?

I bought the N300 Mbps Exquisite and it was bad for videogames. I tried playing an FPS game and the ping/latency was unchanged from using the ethernet cable before and afterwards but it experienced packet loss and was laggy and unplayable.

I have a sky router at the moment - i plug this into my PC to pick up the wifi signal to get the internet on my PC?

Correct - you may need to load the disc that comes with the router into your PC and go through the installation process. You will also then need to log your router onto your WiFi Hub (which means you will need password etc details, usually on the back of the Hub).We have had ours for a couple of months and it works very well.

Will this help with bad Wi-Fi on holiday (Menorca)

It can't improve the Wi-Fi signal but it will make the most of whatever is available as it's a good dongle.

is it compatible with Ubuntu?

Not tried it - mine is a Windows device.
