How do you release the plunger for the product? I have tried and failed miserably.

Make sure the plunger base bit is well screwed on to the bottle clockwise nice and tight. Turn plunger anticlockwise and it should pop it.

Does it damage coloured hair?

Not really. It doesn't wash out colour anymore than do colour-specific hair shampoos.
