does it fit a 15inch laptop

Hi, I am using Kensington stand for my 16'' laptop and it fits all right. The laptop is a bit big for this stand but the stand is very sturdy and does it's job. It really cools my laptop a lot which used to be very hot at the bottom before. I guess it shuld fit 15'' even better.

can this tem be used to heighten my projector to set my picture on my screen at a better height?

Yes but your pictures would be sloped, better to use an old fashioned video wall bracket or a tall unit

Does the bottom of the laptop touch anything? Mine overheats when I game, so I need the bottom of the laptop to be clear,

If it's up, there's that big empty square area you see on the picture. When flat, you only have those three ellipsis to provide air flow.
