If I put this on the pole above my house, is there a way to safely ground this so it doesn't get fried during a storm?

Considering this is a battery powered device with no wires going to it, I would think you could simply install it on a fiberglass pole and not have to worry about lighting at all.

If I wanted to monitor 16 plants can 2 of these units be operated in close proximity to each other?

I'm not sure what "2 of these units" you are referring to. This is under the Wittboy section at Amazon. But yes you can use multiple gateways each monitoring 8 soil sensors. But you will have to manually configure each gateway to specific sensors.

Is the wind both speed & gust? Is total rain available in the app with out any internet? Is this station good for remote camping?

I use my older Ecowitt without internet. It reports via rf to ecowitt module which puts it onto my netork. Then raspberry pi zero w that is running Weewx and gets the data that logs everything and displays it in graphs for day, week, year. Not sure if this newer version is supported by Weewx or not but worth looking into.
