I need the fat specifically from the beef kidney. I call that kidney suet, is this the same?

I don’t know if this is explicitly and exclusively kidney fat but I can tell you that this is the household name in the UK for all savory and sweet suet-based puddings (steak and kidney, Sussex Pond, jam roly poly etc).

Can I freeze this suet

Yes, but it has a long shelf life so there is no need to freeze it

Can this be used to make real mincemeat? The kind that actually uses meat, not the fruit version current thought of as mincement.

Perfect for a multiple choice of dishes
