Will these work with Contigo water bottles?

Possible depending on how tall they need to be. They work perfect with Starbucks cups.

How do you cut them down?

Just cut them with any serrated knife and use a lighter on the edges to smooth out and get rid of any flakes that occur during cutting

Which ones are people buying for the Starbucks cups?

I use these for my Starbucks cups and they work perfectly!

Can they be used for hot beverages like lattes or hot chocolate?

They are better for cold but could be used for hot liquid. I imagine plastic is not the best for hot drinks.
