My pick arrived with a subtle, but very noticeable cup in it. Is there some way to flatten it back out?

Annoying yes. Put it in some boiling water for a minute or so and while still warm put it under some considerably pressure (not squashy), or weight (upside down - cupped mid bit higher than the outsides) and leave it there for a while. I used to do that with tortoise shell back in the '80s to keep them playable and comfortable.
