How is product guaranteed not contaminated with gmo?  the flour i buy is from italy and they don't have gmo grains like we do in america.

Hi there. Good Question. It is not possible for einkorn to be GMO since einkorn is an ancient grain which came from Italy only a few years ago, it has never been genetically modified, if it were modified, it would no longer be einkorn. I can also vouch for this personally since modified and hybridized grains produce much greater yields, close to 200 bushels per acre, this einkorn only produces 30 bushels per acre(part of the reason it is so expensive). It also has absolutely no spray resistance, I've heard from other experimental farmers that so much as a whiff of spray from the neighbors field which his hybridized wheat is tolerating will kill einkorn. Now for the minimal chance of cross-pollination contamination. The only plant this grain could pollinate with besides natural grass seeds would be wheat. Wheat is not GMO. People often think it is but it was never approved by the FDA. Wheat is only hybridized and a lot of the original goodness bred out of it in exchange for production but it is not GMO. We ourselves protect from the risks of cross pollination and chemical over-spray by growing in remote fields in the mountains which have never been sprayed and are surrounded by forest. I can't guarantee that other American einkorn producers are isolated from the overspray of neighboring fields but then neither can the Italians. Another consideration for imported grains is the irradiation which most ag products are required to undergo so as not to import new pests and diseases as well as the xray radiation which is absorbed at the border inspections.

No they have not been heat treated. They sprout pretty well, although germination isn't guaranteed of course because they aren't sold as seed.

How can they be hulled and still be whole grain?

good question.  The hill is, or can be rigid & troublesome.  It is a protective covering like an egg shell.  Unless powdered, it may be unpleasant.  Technically, you are right.  Some hulls are not as difficult as others to incorporate as food. This may be an FDA question, for them, or the supplier.
