What size hole to drill for ceiling install..

Always some idiot not answering the actual question...7 7/8'' is the cut out size. The monoprice 6.5" rings for install in a new house are 8" and fit perfectly.

Does this work with bluetooth ?

These are just the speakers. I have a head unit that has Bluetooth hooked up to these speakers

Will I need an amplifier and receiver for these and if so what would be the best type for the 8 speakers

You do need an amplifier/ receiver yes. I bought a 6 zone Pyle amplifier with speakers in different areas of the house. Heads up these have little bass to the speakers. Will need a sub if you like low notes.
