Does this look like a normal, adult backpack? (Can I wear it to the beach and not look like an alcoholic?)

Yes, it looks like a regular adult backpack. Both my husband and I took turns carrying it on our vacation.

Is the outside of the backpack water resistant? I’m thinking of bringing it to Disney, and wondering if it will be ok to wear on water rides?

That's the exact reason why I purchased it. It was perfect for Disney. I would freeze 4 or 5 bottles of water to use as my coldpacks. Then add other drinks and food. I used it today for the Indy 500, where we walk about a mile from our parking to our seats. Worked great! We had no problems on the water ride. It's a great buy.

Can someone that owns this pack provide us with approximatre dimensions?

It's about 18 inches in length and 12 inches wide. Approximately 6 inches deep. For the price man it is really the best out there I'm extremely happy with it. Plenty of room inside it.

How big does the waist strap get? What size waist do you thinke it will expand to?

This strap does not help in reducing the weight of the backpack. You will end up with it closed behind your back and never use it.
