Should these be installed at more than a 1 degree drop. I plan to use two with end discharge

I installed 2. One at 1 degree and end discharge, the other leveled with a middle discharge. It’s been 18 months, so far no issues with either.

Is one of the end caps supplied capable of connecting directly to the drain pipe?

Depends of the size of the drain pipe. Answer is yes, and even if you have to buy adapter, they are very cheap.
