what are the measurements without the towel rack or spice holder?

Counter is 35 1/2 inch's long by 15 1/2 in wide without spice rack or towel holder. I left off spice rack and attached a paper towel holder.

Can the spice rack & towel bar be removed?

You do not have to add them when assembling it.

How do you clean the kitchen island surfaces (countertop as well as cabinet doors, drawer, etc)??

Yes I love this thing it is perfect in my kitchen. Hugh drawer and very large cabinet for storing what ever you need.
