It’s great. I’ve only used it for under high chair, But it catches everything. I don’t see why it wouldn’t meet your needs.

Can this withstand a rabbit, if the bunny was to scratch on it? Like an adult rabbit?

I don't think these will withstand sharp scratches, they are more than one ply, in that a small sharp scratch could peel back a layer. These are great to save floors, strong, easily cleaned, but they are not impervious. I would get it, as overall, it is a layer of protection from pet damage.

How thick is this mat? I’m wondering if I can place it over the outside of my house door to protect the door from cat scratches?.

It might work, it is thick enough, but I would look for a product to fit the problem. There are such products, such as: "PROTECTO Door Protector from Dog Scratching – 18”x12” Premium Cat Scratch Pad – Heavy Duty Clear Cover to Protect Door, Frame & Furniture from Scratching – Durable Shield for Interior & Exterior Use." Cats are persistent, and even though the mat is strong, a cat could work through it, or get around a plastic mat.
